Salsa Verde and Chorizo Nachos

I know you’re sitting there, thinking, “Girlfriend. I have got this nachos business locked down. Why are you telling me how to make nachos? You are preaching to the choir.”

Which is exactly why I’m sitting here, telling you, “Peoplefriends! I highly suggest you get the best chorizo out there and combine it with Trader Joe’s salsa verde, extra sharp cheddar cheese, and fry your own dang tortilla chips.”

What can I say, I like to come up with new and innovative ways to gain a hundred pounds in five minutes. This is a talent that I have.

Lemme break this down for you:

La Tortilla Factory tortillas. Hands down, these are the best corn-wheat blend tortillas. There actually are not too many corn-wheat blend tortillas,  so I guess there’s not too much competition. They’re calorific in comparison to just regular corn tortillas, but they’re good!

This is happens when you “deep fry” them (or just put about 1/4” of canola oil in a small cast iron skillet, heat to medium-high heat, toss them in - do a test one first to make sure the oil is hot enough, flip them over, and take them out, place on paper towels, blot and salt them).

Did you know tomatillos are really easy to grow? Did you know I grew approximately 60 little tomatillos last year, then I went to Chicago for a trade show and forgot about them, and never made salsa verde with them? Something about all those little paper shells and the thought of way-too-tart tomatillos just made me forget about them in the crisper. None of us would touch them. Tragedies galore. This year, we won’t make the same mistake.

Chorizo from Chris at El Salchichero, ‘round the corner. I bought exactly one link from him. I will have to buy more. This took maybe 20 minutes to cook at a fairly lowish-medium temperature. It’s pork, I’m paranoid, what else is new.

Cover the chips with half a link of broken-up chorizo, dollops of salsa verde, and shredded sharp cheddar cheese, then bake until the cheese is melted at about 375. This is a heavenly weekend lunch.
