Saw these Roasted Domino Potatoes in the latest Bon Appetit while waiting in the checkout line at the new Berkeley Bowl last night. Couldn’t help but think, “But what do you do with the sides of the potato that you cut off?” Second thought was, “Oh, pretty! They’re square potatoes.”
